Important results from the project
The aim of the project was to develop a new kind of tempeh made of Swedish, organic split peas. The goal was that through a new production method create a tempeh with an even more attractive texture and flavour than traditional tempeh.
Expected long term effects
The new production process gave the expected results: more flavour and improved texture. A number of products which can be used in significantly more areas than traditional tempeh have been developed. Products that are expected to suit a Swedish as well as a European market.
Approach and implementation
The project was divided in three parts. Part 1: nutritional aspects. Part 2: development of flavour and texture. Part 3: visual aspects and recipes.
