Important results from the project

The project was initiated to develop models to simplify the product development of sugar reduced products in food industry. The project has generated the foundation for simulation models for predicting the experienced sweetness of food. The work done has shown that the simpler drinks tested have been able to predict sweetness with good precision. The model should be used to simplify and optimize sugar reduction and minimize the use of added sugar or sweeteners.

Approach and implementation

We have also chosen to study stevia glycosides as this sweetening system is a promising substitute for added sugar.
